Weekend Candy is a rich, nutty, and fruity confection with caramelized sugar, coffee creamer, and a medley of nuts and candied fruits, perfect for sharing during special occasions.

Ingredients

  • 3 cups sugar
  • 1 cup light corn syrup
  • 1 1/2 cups coffee creamer
  • 1/2 pound pecans
  • 1/2 pound walnuts
  • 1/2 pound Brazil nuts
  • 1/2 cup candied pineapple
  • 1/2 cup candied cherries

Instructions

  1. Boil sugar, syrup, and creamer in a saucepan to soft ball stage.
  2. Cool to lukewarm, about 30 minutes.
  3. Add vanilla.
  4. Stir until mixture begins to thicken.
  5. Add fruit and nuts.
  6. Press into a buttered pan.
  7. Work quickly.
  8. When cool, cut into squares.
