Ingredients

  • 2 lb beef, cut in 1-inch cubes
  • 8 oz Catalina dressing
  • 2 cups water
  • potatoes
  • carrots, cut in rounds
  • onions
  • refrigerated biscuits
  • grated Parmesan cheese

Instructions

  1. Marinate the beef in Catalina dressing for several hours or overnight in the fridge.
  2. Remove the beef from the marinade and brown it in a skillet.
  3. Combine the browned meat, marinade, and water in a 2 1/2-quart casserole dish.
  4. Cover the casserole and bake at 350°F for 1 hour.
  5. Add the vegetables (potatoes, carrots, onions) to the casserole and continue baking for 45 minutes.
  6. Arrange refrigerated biscuits around the edge of the casserole and brush them with margarine.
  7. Sprinkle grated Parmesan cheese over the biscuits.
  8. Bake at 475°F for 8 to 10 minutes until biscuits are golden and cheese is melted.
