Ingredients

  • 1 large can crushed pineapple
  • 1 cup water
  • 1 teaspoon pineapple flavoring
  • 2 (8 oz.) cartons Cool Whip
  • 3/4 cup powdered sugar
  • 1 (8 oz.) package Philadelphia cream cheese

Instructions

  1. Drain pineapple in a bowl, reserving the juice.
  2. Use the pineapple juice, water, and enough cornstarch to thicken well; bring to a boil and cook a couple of minutes.
  3. Add pineapple flavoring to the mixture and refrigerate until very cold.
  4. Soften the cream cheese and mix with pineapple and powdered sugar.
  5. Add the cold, thickened juice mixture and Cool Whip to the cream cheese mixture and blend well.
  6. Line the bottom and sides of a 9 x 13 x 2-inch pan with graham crackers.
  7. Pour the pineapple mixture over the graham crackers.
  8. Top with graham cracker squares.
  9. Refrigerate overnight before serving.
