Ingredients

  • 1 egg, separated
  • 3/4 cup milk
  • 1/3 cup oil
  • 1/4 cup orange juice
  • 1 cup whole wheat flour
  • 1 tablespoon sugar
  • 1 1/2 teaspoons grated orange peel
  • 1 teaspoon baking powder

Instructions

  1. In a small mixing bowl, beat the egg white until stiff peaks form; set aside.
  2. In another small mixing bowl, beat the egg yolk, milk, oil, and orange juice together.
  3. Combine the whole wheat flour, sugar, grated orange peel, baking powder, and salt in a bowl.
  4. Stir the dry ingredients into the wet mixture until just combined.
  5. Fold in the beaten egg white gently.
  6. Preheat a waffle iron and lightly grease if necessary.
  7. Pour batter into the waffle iron and cook until golden brown.
