White Bean Salad

Ingredients

  • 1 lb dried white beans
  • water
  • 1 large onion
  • 1 cup olive oil
  • 1 medium-sized potato
  • 1 large carrot
  • 5 cloves garlic
  • 1 1/2 teaspoons sugar
  • 1 1/2 teaspoons salt
  • chopped parsley
  • lemon wedges

Instructions

  1. Soak dried white beans overnight in water to cover, or cover beans with water, bring to a boil, boil 2 minutes, then let stand for 1 hour.
  2. Drain and cook the soaked beans in boiling water until tender, then drain and let cool.
  3. In a large bowl, combine chopped onion, diced potato, sliced or diced carrot, and minced garlic.
  4. Add the cooked beans to the vegetable mixture.
  5. In a small bowl, whisk together olive oil, sugar, and salt.
  6. Pour the dressing over the bean and vegetable mixture and toss gently to combine.
  7. Chop parsley and add to the salad.
  8. Serve the salad with lemon wedges on the side for squeezing before eating.
