White Bean Salad

- Soak dried white beans overnight in water to cover, or cover beans with water, bring to a boil, boil 2 minutes, then let stand for 1 hour.
- Drain and cook the soaked beans in boiling water until tender, then drain and let cool.
- In a large bowl, combine chopped onion, diced potato, sliced or diced carrot, and minced garlic.
- Add the cooked beans to the vegetable mixture.
- In a small bowl, whisk together olive oil, sugar, and salt.
- Pour the dressing over the bean and vegetable mixture and toss gently to combine.
- Chop parsley and add to the salad.
- Serve the salad with lemon wedges on the side for squeezing before eating.
