White Christmas Fruit Cake

Ingredients

  • 3 cups plain flour
  • 2 cups sugar
  • 6 eggs
  • 1 pound pecan halves
  • 1/2 pound candied red cherries
  • 1/2 pound candied green cherries
  • 1/2 pound melted margarine
  • 1/2 pound melted butter
  • 1 ounce lemon extract
  • 1 ounce vanilla extract
  • 1 pound white raisins
  • 1/4 pound candied pineapple

Instructions

  1. Beat butter, margarine, sugar, egg yolks, and extracts well.
  2. Mix in 2 1/2 cups flour, dredging fruit and nuts with the remaining 1/2 cup flour.
  3. Don't chop nuts or fruit.
  4. Beat egg whites until stiff and fold into the batter.
  5. Add the fruit and nuts to the batter and mix well.
  6. Pour the batter into a tube pan.
  7. Bake at 300°F for 1 1/2 to 2 hours.
  8. Increase oven temperature to 350°F and bake for an additional 7 to 10 minutes.
  9. Leave the cake in the oven for 7 minutes after baking.
  10. Remove from oven and cool in the pan.
  11. Once cooled, wrap in foil and store airtight in a cool place.
  12. Bake at least 10 days before holidays for best flavor.
