- Soften gelatin in cold water.
- In a saucepan, mix the sugar, salt, flour, and milk.
- Cook over low heat, stirring until the mixture boils.
- Boil for 1 minute.
- Remove from heat.
- Stir in the dissolved gelatin.
- Allow the mixture to cool until partially set.
- Beat with a beater until smooth.
- Blend in vanilla and almond extract.
- Whip the heavy cream until stiff.
- Beat the egg whites until fluffy.
- Add cream of tartar and 1/2 cup sugar to the egg whites.
- Beat until stiff and glossy.
- Fold the whipped egg whites into the custard mixture.
- Fold in shredded coconut.
- Pour into a baked pie shell.
- Sprinkle additional shredded coconut on top.
- Chill until set.
