Ingredients

  • 1 envelope unflavored gelatin
  • 1/4 cup cold water
  • 1/2 cup sugar
  • 1/2 teaspoon salt
  • 4 tablespoons flour
  • 1 1/2 cups milk
  • 3/4 teaspoon vanilla
  • 1/4 teaspoon almond extract
  • 1/2 cup heavy cream
  • 3 egg whites
  • 1/4 teaspoon cream of tartar
  • 1/2 cup sugar

Instructions

  1. Soften gelatin in cold water.
  2. In a saucepan, mix the sugar, salt, flour, and milk.
  3. Cook over low heat, stirring until the mixture boils.
  4. Boil for 1 minute.
  5. Remove from heat.
  6. Stir in the dissolved gelatin.
  7. Allow the mixture to cool until partially set.
  8. Beat with a beater until smooth.
  9. Blend in vanilla and almond extract.
  10. Whip the heavy cream until stiff.
  11. Beat the egg whites until fluffy.
  12. Add cream of tartar and 1/2 cup sugar to the egg whites.
  13. Beat until stiff and glossy.
  14. Fold the whipped egg whites into the custard mixture.
  15. Fold in shredded coconut.
  16. Pour into a baked pie shell.
  17. Sprinkle additional shredded coconut on top.
  18. Chill until set.
