Ingredients

  • 3 Tbsp. vegetable oil
  • 1/2 tsp. vegetable oil
  • 1 cup all-purpose flour
  • 1 cup fresh corn, cut from cob or frozen, thawed
  • 2/3 cup yellow cornmeal
  • 1/3 cup whole wheat flour
  • 2 Tbsp. sugar
  • 2 tsp. baking powder
  • 1/2 tsp. salt
  • 1/4 tsp. ground red pepper
  • 1 cup skim milk

Instructions

  1. Coat a 9-inch cast-iron skillet with 1/2 teaspoon vegetable oil.
  2. Place the skillet in a 425°F oven and heat for 10 minutes.
  3. Combine the remaining 3 tablespoons of vegetable oil, all-purpose flour, fresh or frozen corn, yellow cornmeal, whole wheat flour, sugar, baking powder, salt, and ground red pepper in a bowl, stirring well.
  4. Pour the batter into the preheated skillet.
  5. Bake at 425°F for 25 minutes, or until a wooden pick inserted in the center comes out clean.
  6. Remove from oven and let cool slightly before cutting into wedges.
