Wicklow Pancake is a savory Irish dish featuring fluffy pancake layers topped with prawns and fresh herbs, perfect for a light appetizer or brunch centerpiece.

Ingredients

  • 4 eggs
  • 2 c. milk
  • 2 c. white breadcrumbs
  • 6 scallions, chopped
  • 1 Tbsp. chopped parsley
  • 1/2 tsp. chopped thyme
  • 1 Tbsp. butter
  • salt and pepper
  • 24 peeled, cooked prawns
  • 4 shallow stemmed glasses

Instructions

  1. Put a little shredded lettuce in the bottom of each stemmed glass.
  2. Lay 6 peeled, cooked prawns on top of the lettuce in each glass.
  3. Prepare the pancake batter by mixing eggs, milk, breadcrumbs, chopped scallions, parsley, thyme, and a pinch of salt and pepper.
  4. Melt butter in a pan over medium heat.
  5. Pour batter into the pan to form pancakes and cook until golden on both sides.
  6. Place the pancakes on serving plates or directly into the glasses.
  7. Top the pancakes with the prawns and serve immediately.
