- Put a little shredded lettuce in the bottom of each stemmed glass.
- Lay 6 peeled, cooked prawns on top of the lettuce in each glass.
- Prepare the pancake batter by mixing eggs, milk, breadcrumbs, chopped scallions, parsley, thyme, and a pinch of salt and pepper.
- Melt butter in a pan over medium heat.
- Pour batter into the pan to form pancakes and cook until golden on both sides.
- Place the pancakes on serving plates or directly into the glasses.
- Top the pancakes with the prawns and serve immediately.
