Ingredients

  • 4 veal cutlets
  • 4 slices Gruyere cheese
  • 1/3 cup butter
  • 1 teaspoon grated cheese
  • bread crumbs
  • lemon juice
  • salt
  • pepper
  • flour

Instructions

  1. Sprinkle veal cutlets with lemon juice, salt, pepper, and grated cheese.
  2. Let sit for 5 minutes.
  3. Roll each veal cutlet in flour, then dip in beaten egg, and finally coat with bread crumbs.
  4. Fry the breaded veal on one side in hot butter until golden brown.
  5. Turn the veal cutlets over and reduce heat.
  6. Place a slice of Gruyere cheese on each cutlet.
  7. Slowly fry the other side until cheese melts and veal is cooked through.
  8. Serve hot with a crisp salad.
