Ingredients

  • 1/2 lb. salt pork
  • 1 onion
  • 1 (40 oz.) can pork and beans
  • 1/4 cup dark molasses
  • 1/4 cup brown sugar
  • 1 tablespoon yellow prepared mustard
  • 1/4 teaspoon ground ginger
  • 1/4 teaspoon cayenne pepper
  • 1/4 teaspoon ground cumin
  • 1 to 4 jalapeno peppers
  • 1/2 cup bottled barbecue sauce
  • salt

Instructions

  1. Fry salt pork over medium heat until rendered but not yet crisp.
  2. Add diced onion and cook until soft.
  3. Drain excess liquid from canned pork and beans and combine with salt pork, drippings, and onion.
  4. Stir in molasses, brown sugar, mustard, ginger, cayenne pepper, cumin, jalapeno peppers, and barbecue sauce.
  5. Pour mixture into an earthenware pot or casserole dish.
  6. Stir in extra chunks of already barbecued meat if desired.
  7. Bake uncovered for 1 hour.
