Ingredients

  • 3 oranges, peeled and segmented
  • 1/4 lb. fresh cranberries
  • 2 Tbsp. honey
  • 1/2 lb. wild rice, cooked and cooled
  • 10 to 12 oz. chicken breast, cooked and cubed or shredded
  • 1 1/4 c. walnuts, toasted and chopped
  • juice of 1 orange or 1/4 c. orange juice
  • 1 to 2 Tbsp. champagne vinegar

Instructions

  1. In a saucepan, cook cranberries in a small amount of water until the skin begins to pop.
  2. Drain the cranberries and place them in a large bowl. Drizzle with honey to coat.
  3. Cut the oranges into sections and halve them.
  4. Combine the orange sections, cooked and cooled wild rice, cooked and cubed or shredded chicken, and toasted chopped walnuts with the cranberries.
  5. Add orange juice and champagne vinegar to the mixture and toss to combine.
