Ingredients

  • 3 large onions
  • 2 medium carrots
  • 1 1/2 cups flour
  • 1 pint light cream
  • 1 cup cooked rice
  • 3 stalks celery
  • 1 cup butter
  • 3 quarts chicken broth with 1 tablespoon salt
  • 2 cups diced chicken

Instructions

  1. Chop the onions, carrots, and celery.
  2. Cook the chopped vegetables in a small amount of water for 20 minutes.
  3. Melt the butter in a pot and blend in the flour thoroughly.
  4. Heat the chicken broth and light cream, then gradually add to the butter and flour mixture, stirring until all lumps disappear.
  5. Add the cooked vegetables along with the water they were cooked in.
  6. Stir and cook over low heat for 10 minutes.
  7. Season the soup to taste with salt and other seasonings as desired.
  8. Add the cooked diced chicken and rice.
  9. Cook over low heat until the meat is heated through and flavors meld.
