- Chop the onions, carrots, and celery.
- Cook the chopped vegetables in a small amount of water for 20 minutes.
- Melt the butter in a pot and blend in the flour thoroughly.
- Heat the chicken broth and light cream, then gradually add to the butter and flour mixture, stirring until all lumps disappear.
- Add the cooked vegetables along with the water they were cooked in.
- Stir and cook over low heat for 10 minutes.
- Season the soup to taste with salt and other seasonings as desired.
- Add the cooked diced chicken and rice.
- Cook over low heat until the meat is heated through and flavors meld.
