Ingredients

  • 3 or 4 medium zucchini, grated
  • 1/2 onion, grated
  • 1 tsp. salt
  • 1 tsp. pepper
  • 1 egg
  • 1/4 c. cornmeal
  • 1/4 c. plus 1 Tbsp. flour

Instructions

  1. Combine all ingredients; mix well.
  2. Drop by spoonfuls into 1/2-inch hot oil until golden brown and cooked through.
  3. Serve hot and enjoy!
