Ingredients

  • 8 lamb chops, 3/4 to 1-inch thick
  • 1/4 cup thinly sliced green onion
  • 1 (2 oz.) can sliced pimiento, drained and chopped
  • 1/2 teaspoon dried oregano, crushed
  • 1/4 teaspoon dried tarragon, crushed
  • 1/4 teaspoon lemon pepper or pepper
  • 2 tablespoons olive or cooking oil
  • 1 tablespoon cornstarch
  • 1 tablespoon Worcestershire sauce
  • 1/2 cup dry white wine

Instructions

  1. Cook the green onion, pimiento, oregano, tarragon, and lemon pepper in hot oil until the onion is tender.
  2. Combine the cornstarch, Worcestershire sauce, and 1/3 cup cold water.
  3. Stir the mixture into the onion mixture.
  4. Cook and stir until the sauce is bubbly.
  5. Add the dry white wine to the sauce.
  6. Keep the sauce warm until serving.
