Ingredients

  • 1 lb. ground lamb
  • 1 can chickpeas (16 oz.)
  • 1 small can tomato sauce
  • 1/2 lb. fresh green beans
  • 1/2 lb. fresh sliced mushrooms
  • 1 small chopped onion
  • 1 chopped yellow pepper
  • 1 chopped tomato
  • 2 stalks celery, cut up
  • fresh basil
  • pinch of oregano

Instructions

  1. Saute ground lamb in olive oil; pour off excess fat.
  2. Transfer the lamb to a Dutch oven and add chickpeas.
  3. Saute sliced mushrooms, chopped celery, and chopped onion in olive oil.
  4. Add the sautéed vegetables to the lamb stew along with tomato sauce.
  5. Add minced garlic, fresh basil, oregano, salt, and pepper to taste.
  6. Stir in green beans, yellow pepper, and chopped tomato.
  7. Cook the stew on medium-low heat for 45 minutes.
  8. Serve the stew in bowls and drizzle with olive oil.
  9. Serve with salad and crusty bread.
