Ingredients

  • 1 cup mashed squash
  • 1 or 2 slices bacon
  • 1/4 cup chopped onion
  • 1/3 cup grated Cheddar cheese
  • 1/4 teaspoon salt
  • dash of Tabasco or black pepper
  • 1/4 cup buttered bread crumbs

Instructions

  1. Grease or spray a small casserole dish.
  2. Fry bacon until crisp; crumble into the squash.
  3. Fry onion in 1 tablespoon of drippings until transparent.
  4. Add the cooked onion to the squash mixture.
  5. Add grated Cheddar cheese, salt, and Tabasco or black pepper to the mixture.
  6. Mix well to combine all ingredients.
  7. Transfer the mixture to the prepared baking dish.
  8. Top with buttered bread crumbs.
  9. Bake in a 325° or 350°F oven until heated through and crumbs begin to brown, about 25 to 30 minutes.
