Ingredients

  • 2 lb. winter squash
  • salt
  • pepper
  • 1/4 tsp. thyme
  • 2 Tbsp. butter
  • 2 Tbsp. light cream
  • 4 Tbsp. Swiss cheese
  • 3 eggs

Instructions

  1. Peel the squash and cook in salted boiling water until soft.
  2. Remove the squash from water and mash.
  3. Mix the mashed squash with salt, pepper, thyme, melted butter, light cream, and Swiss cheese.
  4. Beat in the egg yolks until well combined.
  5. In a separate bowl, beat the egg whites until stiff peaks form.
  6. Gently fold the beaten egg whites into the squash mixture.
  7. Pour the mixture into a buttered 2-quart baking dish.
  8. Bake at 350°F (180°C) for 20 to 30 minutes or until set and golden on top.
  9. Serve immediately.
