- Peel the squash and cook in salted boiling water until soft.
- Remove the squash from water and mash.
- Mix the mashed squash with salt, pepper, thyme, melted butter, light cream, and Swiss cheese.
- Beat in the egg yolks until well combined.
- In a separate bowl, beat the egg whites until stiff peaks form.
- Gently fold the beaten egg whites into the squash mixture.
- Pour the mixture into a buttered 2-quart baking dish.
- Bake at 350°F (180°C) for 20 to 30 minutes or until set and golden on top.
- Serve immediately.
