Ingredients

  • 2 lb. beef stew meat
  • 2 Tbsp. shortening
  • 1 tsp. seasoned water or 4 beef bouillon cubes
  • 1 1/2 c. boiling water
  • 1 1/2 c. tomato juice
  • 6 small onions
  • 3 medium potatoes
  • 1 1/2 c. kernel corn
  • 1 c. sliced carrots

Instructions

  1. Brown the beef stew meat in hot shortening in a heavy skillet, sprinkling with seasoned salt as it cooks.
  2. Add boiling water and tomato juice to the skillet.
  3. Simmer, covered, for 1 hour.
  4. Add quartered onions, diced potatoes, kernel corn, and sliced carrots.
  5. Cook until vegetables are tender.
  6. Add more water or tomato sauce if desired.
  7. Serve with biscuits.
