Wonder Marshmallows are soft, chewy, vanilla-flavored marshmallows rolled in toasted coconut, perfect for snacking, sharing at parties, or adding a sweet touch to desserts.

Ingredients

  • 2 envelopes Knox gelatine
  • 1/3 cup water
  • 1/2 cup sugar
  • 2/3 cup Karo light corn syrup
  • 1 teaspoon vanilla
  • shredded coconut

Instructions

  1. Soften the gelatine in 1/3 cup water.
  2. Place the gelatine over boiling water and stir until dissolved.
  3. Add sugar and stir until dissolved.
  4. Remove from heat.
  5. Pour Karo light corn syrup into a large bowl of an electric mixer.
  6. Add vanilla and the gelatine and sugar mixture.
  7. Beat on highest speed until the mixture becomes thick and marshmallow-like, about 15 minutes.
  8. Brown shredded coconut in a 350° to 375°F oven.
  9. Sprinkle the bottom of a pan with coconut; pour in the marshmallow mixture.
  10. Sprinkle the top with coconut.
  11. Put in a cool place for 1 hour.
  12. Cut into squares and roll edges in coconut.
