Ingredients

  • 2 boneless chicken breasts
  • 2 qt. water
  • 1/2 tsp. salt
  • 1/2 tsp. pepper
  • 1 cup onion
  • 1 cup carrots
  • 1 cup celery
  • 1/2 package instant mashed potatoes

Instructions

  1. Boil chicken breasts until tender, then remove and chop into pieces.
  2. Add chicken bouillon cubes to water and set aside.
  3. Sauté onion, carrots, and celery until softened.
  4. Add sautéed vegetables to the broth along with the bouillon cubes.
  5. Bring to a gentle boil and simmer for 45 minutes to 1 hour.
  6. Stir in instant mashed potatoes to thicken the soup.
  7. Add additional water if needed to reach desired consistency.
  8. Return chopped chicken to the soup and stir well.
  9. Optionally, use a ham bone and ham instead of chicken and omit chicken bouillon.
