- Blend onion soup and sour cream until smooth.
- Let the mixture stand for 2 hours.
- In a large roasting pan, place chicken, sherry, water, and sprinkle with seasonings such as pepper, basil, thyme, parsley, curry, and salt.
- Cover the pan tightly with foil or lid.
- Bake at 300°F (150°C) for 1 1/2 hours.
- Remove from the roaster, cover loosely, and allow to cool.
- Combine 2 cups hot broth with mushroom soup.
- Slowly stir in the sour cream mixture to prevent curdling.
- Cook rice according to package instructions.
- Skin and bone the cooked chicken, then cut up the meat into pieces.
- Combine the chicken with cooked rice.
- Pour the prepared sauce over the chicken and rice mixture.
- Heat uncovered at 250°F (120°C) for 30 to 45 minutes.
- Sprinkle French fried onions over the top and return to oven for about 5 minutes to brown, then serve.
