Ingredients

  • uncle ben rice
  • curry

  • mushroom soup
  • basil
  • thyme
  • parsley
  • french fried onions
  • sherry

Instructions

  1. Blend onion soup and sour cream until smooth.
  2. Let the mixture stand for 2 hours.
  3. In a large roasting pan, place chicken, sherry, water, and sprinkle with seasonings such as pepper, basil, thyme, parsley, curry, and salt.
  4. Cover the pan tightly with foil or lid.
  5. Bake at 300°F (150°C) for 1 1/2 hours.
  6. Remove from the roaster, cover loosely, and allow to cool.
  7. Combine 2 cups hot broth with mushroom soup.
  8. Slowly stir in the sour cream mixture to prevent curdling.
  9. Cook rice according to package instructions.
  10. Skin and bone the cooked chicken, then cut up the meat into pieces.
  11. Combine the chicken with cooked rice.
  12. Pour the prepared sauce over the chicken and rice mixture.
  13. Heat uncovered at 250°F (120°C) for 30 to 45 minutes.
  14. Sprinkle French fried onions over the top and return to oven for about 5 minutes to brown, then serve.
