Ingredients

  • 1/2 cup chopped onion
  • 1 tablespoon butter or margarine
  • 1/4 cup pearl barley
  • 1/2 cup dried beans (white, lima or kidney)
  • 2 cups vegetables
  • chicken or beef broth
  • 1 tablespoon chopped parsley
  • 2 strips bacon, cooked crisp and crushed
  • 1 tablespoon crushed coriander seed
  • 1/2 teaspoon salt

Instructions

  1. Saute chopped onion in butter until tender.
  2. Add pearl barley and continue sauteing until barley is light brown.
  3. Add dried beans, broth, chopped parsley, crushed bacon, crushed coriander seed, and salt.
  4. Cover the pot.
  5. Bring to a boil, then reduce heat to a simmer and cook for about 1 hour, adding additional broth or water if necessary, until beans and barley are tender and all moisture is absorbed.
