Ingredients

  • 1/4 cup light teriyaki sauce
  • 2 tablespoons cider vinegar
  • 1 tablespoon cornstarch
  • 3/4 pound shrimp, cleaned
  • 16 ounces frozen mixed vegetables, thawed (broccoli, carrots, water chestnuts)
  • 2 cloves garlic, minced

Instructions

  1. In a small bowl, stir together light teriyaki sauce, cider vinegar, and cornstarch until smooth. Set aside.
  2. Generously spray a large skillet with cooking spray.
  3. Heat the skillet over medium heat. Add shrimp, thawed mixed vegetables, and minced garlic.
  4. Stir constantly and cook for 3 to 4 minutes until shrimp are cooked through and vegetables are tender.
  5. Stir the prepared sauce mixture; add it to the skillet, stirring constantly, and bring to a boil.
  6. Boil for one minute until sauce thickens slightly.
