Ingredients

  • 1/2 c. medium chopped red or Creole onions
  • 1/2 c. thinly sliced fresh mushrooms
  • 1 Tbsp. canola oil
  • 1 lb. fresh peeled crawfish tails
  • 3 heaping Tbsp. white flour
  • 1/4 c. finely chopped green onion tops
  • 2 c. skim milk
  • 1 Tbsp. Butter Buds
  • season to taste

Instructions

  1. Sauté the chopped onions and sliced mushrooms in canola oil until tender.
  2. Stir in the flour and cook for a minute to make a roux.
  3. Gradually add skim milk, stirring constantly until the sauce thickens.
  4. Add the crawfish tails and season to taste, cooking until heated through.
  5. Stir in the chopped green onion tops and butter buds.
  6. Serve hot over rice or your preferred side.
