Ingredients

  • 1 onion, peeled and chopped
  • 2 cloves garlic, minced
  • 1 c. tomato juice
  • 3 c. chicken broth
  • 1 c. mushrooms in liquid
  • 1 medium cabbage, chopped
  • 1 c. chopped mixed vegetables
  • 1 Tbsp. horseradish
  • 1 Tbsp. Worcestershire sauce

Instructions

  1. In a large pot, sauté the chopped onion and minced garlic until translucent.
  2. Add the tomato juice and chicken broth to the pot and bring to a simmer.
  3. Stir in the canned mushrooms with liquid, chopped cabbage, and mixed vegetables.
  4. Add horseradish and Worcestershire sauce, then stir well.
  5. Simmer for about 20-30 minutes until vegetables are tender.
  6. Serve hot and enjoy.
