  • 1/4 tsp. pepper
  • 2 Tbsp. vegetable oil
  • 1 onion
  • 8 large garlic cloves
  • 3/4 c. dry red wine or beef broth
  • 2 to 3 tsp. instant coffee granules
  • 1 bay leaf
  • 3 Tbsp. cold water
  • 2 Tbsp. cornstarch

Instructions

  1. Rub the beef chuck roast with salt and pepper.
  2. In a skillet, brown the beef in vegetable oil; then transfer to a slow cooker.
  3. Sauté the onion and crushed garlic in the skillet until browned.
  4. Add the red wine or beef broth and instant coffee granules; cook over medium heat, stirring to loosen browned bits from the bottom.
  5. Pour the mixture over the meat in the slow cooker.
  6. Push the bay leaf into the liquid.
  7. Cover and cook on low for 9 to 10 hours until the meat is tender.
  8. Using a slotted spoon, remove the garlic and bay leaf.
  9. In a small bowl, stir the cold water and cornstarch until smooth.
  10. Stir the cornstarch mixture into the hot liquid in the slow cooker.
  11. Cook on high for 10 to 15 minutes until the gravy thickens.
  12. Slice the meat and serve with the gravy.

Tips & Substitutions

For a richer flavor, consider using a full-bodied dry red wine like Cabernet Sauvignon instead of beef broth. If you're short on time, searing the meat in batches can help speed up the browning process. Instant coffee granules enhance the depth of the gravy, but feel free to omit them if desired. To lighten the dish, you can use olive oil instead of vegetable oil.

Serving Suggestions

Serve the pot roast with mashed potatoes or creamy polenta to soak up the flavorful gravy. Roasted vegetables, such as carrots and Brussels sprouts, complement the dish wonderfully. Storage & Reheating

Leftovers should be stored in an airtight container in the refrigerator for up to 3 days. To reheat, place the pot roast in a covered skillet over low heat, adding a splash of beef broth or water to keep it moist. Alternatively, you can microwave individual portions in a covered dish, adding moisture as needed.

Frequently Asked Questions

Can I use a different cut of beef for this pot roast?

Yes, while a boneless beef chuck roast is ideal for its marbling and tenderness, you can substitute with brisket or a round roast. Just keep in mind that different cuts may require slight adjustments in cooking time to achieve the desired tenderness.

What can I do if I don't have a slow cooker?

If you don’t have a slow cooker, you can adapt this recipe for the oven. After browning the meat and preparing the sauce, transfer everything to a heavy, oven-safe pot with a lid. Cook in a preheated oven at 300°F for about 3 to 4 hours, or until the meat is tender.

Can I make this pot roast ahead of time?

Absolutely! This pot roast can be made a day in advance. After cooking, let it cool completely before refrigerating. The flavors will deepen overnight. When ready to serve, simply reheat on the stove or in the oven, ensuring it’s heated through before serving.
