Yam cookies blend sweet yams with marshmallow creme, cinnamon, and crunchy nuts for a delicious treat perfect for sharing at gatherings or as a comforting snack.

Ingredients

  • 5 medium yams
  • 1 stick butter
  • 2 eggs
  • 1 tsp vanilla
  • 1 tsp cinnamon
  • 1 jar Marshmallow Creme
  • 2 cups nuts
  • 1 1/2 cups vanilla wafers, crushed

Instructions

  1. Cook yams until tender, then pour off water.
  2. Add butter, eggs, vanilla, cinnamon, marshmallow creme, nuts, and crushed vanilla wafers to the yams.
  3. Mash all ingredients together until well combined.
  4. Spoon the mixture onto cookie sheets.
  5. Bake at 400°F (200°C) for 15 to 18 minutes until golden.
