Ingredients

  • 4 cups cut-up cooked or canned yams or sweet potatoes
  • 1/4 cup melted butter
  • 1/2 cup light cream
  • 4 eggs
  • 3/4 teaspoon salt
  • 1/4 teaspoon pepper
  • 1/8 teaspoon cinnamon
  • 4 egg whites

Instructions

  1. Cook yams or sweet potatoes in salted water until they can be pierced easily with a fork, about 40 minutes.
  2. Cool and peel the yams or sweet potatoes.
  3. Preheat the oven as needed (not specified).
  4. Mash the cooked yams or sweet potatoes.
  5. Combine the mashed yams with melted butter, light cream, egg yolks, salt, pepper, and cinnamon.
