Ingredients

  • 1 lb. fresh yams
  • 4 c. water
  • 2 Tbsp. vegetable oil
  • 1 c. chopped onion
  • 2 c. chopped tomato
  • 2 1/2 c. beef stock
  • 1 tsp. salt
  • 1/2 tsp. cayenne pepper
  • sprig of parsley

Instructions

  1. Boil yams in water until tender; remove from heat and drain. Peel immediately under cold running water.
  2. Place yams in a mixing bowl; mash with a potato masher until smooth.
  3. In a large pot, heat vegetable oil over medium heat. Add chopped onion and cook until translucent.
  4. Add chopped tomato to the onion and cook for a few minutes.
  5. Pour in beef stock, add mashed yams, salt, and cayenne pepper. Bring to a boil, then reduce heat and simmer for about 20 minutes.
  6. Garnish with a sprig of parsley before serving.
