  • 1/2 lb. salt pork
  • 1 medium onion

Instructions

  1. Place beans in a 4-quart cooking pot, cover with cold water, and let soak overnight.
  2. In the morning, pour out the water, then cover the beans with fresh water.
  3. Add the salt pork and the onion which has been cut into fine pieces.
  4. Bring to a boil and simmer for at least 1.5 hours or until beans are tender.
  5. Transfer the beans and onion into a baking pan with enough juice to nearly cover the beans.
  6. Season to taste.
  7. Bake at 350°F (175°C) for 1 hour.
  8. Serve with catsup or chili sauce.
