Ingredients

  • 4 cups cranberries
  • 2 cups sugar
  • 1 cup chopped nuts (walnuts, pecans, or filberts)
  • 2 large eggs
  • 1 cup unsifted flour
  • 1/4 cup melted margarine
  • 1/4 cup corn oil

Instructions

  1. Butter a 10-inch pie plate or quiche tin.
  2. Spread cranberries over the bottom of the prepared dish and sprinkle 1 cup sugar and chopped nuts over them.
  3. In a small bowl, beat eggs until frothy.
  4. Add 1 cup sugar and beat well.
  5. Slowly mix in flour, melted margarine, and oil until blended.
  6. Pour the egg mixture over the cranberries, sugar, and nuts.
  7. Optionally, add a little vanilla and reduce sugar for variation.
  8. Bake at 350°F (175°C) for 75 minutes until golden and bubbly.
