Year Round Broccoli Casserole

Ingredients

  • 3 Tbsp. sweet butter
  • 2 Tbsp. flour
  • 1/4 tsp. salt
  • 1/4 tsp. cian pepper
  • 1 c. warm milk
  • 3 oz. cream cheese, softened
  • 3 1/2 c. broccoli pieces, lightly steamed
  • 2 1/3 c. pearl onions, parboiled
  • 1/4 c. shredded sharp Cheddar
  • 1/2 c. Progresso bread crumbs

Instructions

  1. Preheat oven to 350°F (175°C).
  2. Melt 2 tablespoons of butter in a saucepan.
  3. Blend in flour, salt, and cian pepper to make a roux.
  4. Gradually add warm milk, simmer and stir until thickened.
  5. Stir in softened cream cheese until smooth.
  6. In a 1/2-quart casserole dish, place lightly steamed broccoli pieces and parboiled pearl onions.
  7. Pour the sauce over the vegetables and mix lightly.
  8. Sprinkle with shredded sharp Cheddar cheese.
  9. Bake, covered, for 15 minutes.
  10. Cut remaining butter into hunks and lay on top of the casserole.
  11. Sprinkle bread crumbs over the top.
  12. Bake uncovered for an additional 15 minutes until golden and bubbly.
