Ingredients

  • 8 cups sliced squash
  • 2 cups sliced onions
  • 2 cups sliced or diced peppers (green and/or red)
  • 2 cups vinegar
  • 3 cups sugar
  • 2 teaspoons celery seed

Instructions

  1. Prepare squash, onions, and peppers by slicing or dicing as needed.
  2. Let the mixture sit for 1 hour to allow flavors to meld.
  3. Bring vinegar, sugar, celery seed, and mustard seed to a boil in a saucepan.
  4. Add the prepared squash mixture to the boiling liquid and cook for 5 minutes.
  5. Transfer the hot mixture into sterilized jars.
  6. Seal the jars and store.
