Ingredients

  • 10 cups sliced squash
  • 2 cups sliced onions
  • 2 cups bell peppers
  • 3 cups sugar
  • 2 cups vinegar
  • 1 teaspoon mustard seed
  • 1 teaspoon celery seed

Instructions

  1. Cover sliced squash, onions, and peppers with water; add 1/2 cup of salt.
  2. Soak for 1 hour and drain.
  3. Mix sugar, vinegar, mustard seed, celery seed, and turmeric.
  4. Bring the mixture to a boil.
  5. Add the soaked squash, onions, and peppers to the boiling mixture.
  6. Boil for 5 minutes.
  7. Seal in jars.
