Ingredients

  • 4 Tbsp. butter
  • 1/4 c. all-purpose flour
  • 4 c. milk, preheated
  • 1 tsp. prepared mustard
  • 1 tsp. salt
  • pinch of ground red pepper
  • 1 lb. elbow macaroni
  • 1/2 lb. shredded sharp Cheddar cheese
  • 1/2 total torn cheeses mixture (American, Muenster, Swiss, etc.)
  • grated Parmesan/Romano cheese
  • Italian-seasoned bread crumbs

Instructions

  1. Melt butter in a large saucepan; stir in flour until smooth. Cook over low heat, stirring, for about 2 minutes.
  2. Gradually whisk in hot milk until smooth.
  3. Cook, stirring constantly, until mixture boils.
  4. Reduce heat to low and cook for about 10 minutes, stirring frequently, until thick and smooth.
  5. Season with mustard, salt and red pepper.
