Ingredients

  • 1 cup butter
  • 3/4 cup powdered sugar
  • 1 egg
  • 1 1/2 teaspoons vanilla
  • 1/4 teaspoon salt
  • 2 cups all-purpose flour
  • 1 cup oatmeal
  • 1 cup pecans, grated

Instructions

  1. Cream the butter until smooth and fluffy.
  2. Add powdered sugar, egg, vanilla, and salt; mix well.
  3. Add all-purpose flour and blend thoroughly.
  4. Mix in oatmeal until evenly incorporated.
  5. Stir in grated pecans; if the mixture is too dry, add a tablespoon of water.
  6. Form the dough into small walnut-sized balls.
  7. Place on a baking sheet and bake at 325°F for 20 minutes.
  8. While still warm, roll the cookies in powdered sugar.
