Ingredients

  • 1/2 cup molasses filled to 3/4 with white sugar
  • 1/4 cup shortening
  • 1 1/4 cups sifted flour
  • 1/2 teaspoon cinnamon
  • 1 teaspoon baking soda
  • 1 egg
  • 1/2 teaspoon salt
  • 1 teaspoon ginger
  • 1/2 cup boiling water

Instructions

  1. Blend molasses, sugar, shortening, and egg in an electric mixer for about 2 minutes.
  2. Sift dry ingredients and gradually add to the mixture.
  3. Add boiling water last to the batter.
  4. The batter will be thin.
  5. Pour the batter into an 8 x 8 x 2-inch pan.
  6. Bake at 350°F (175°C) for 25 to 30 minutes.
  7. The gingerbread will be very light and not dry.
