Ingredients

  • 1 3/4 cups all-purpose flour
  • 1/2 pound apples, cored, pared, and finely chopped
  • 1/2 cup rye flour
  • 1/4 cup Cheddar cheese, shredded
  • 1/4 cup sugar
  • 2 tablespoons dark raisins
  • 2 tablespoons baking powder
  • 1/4 teaspoon allspice or cinnamon
  • 1/2 cup skim milk
  • 1/3 cup plus 2 teaspoons margarine
  • 1/4 cup egg substitute

Instructions

  1. Preheat oven to 375°F.
  2. Combine all-purpose flour, rye flour, shredded Cheddar cheese, sugar, dark raisins, baking powder, and allspice or cinnamon in a medium mixing bowl.
  3. Stir to combine and set aside.
  4. In a blender, combine skim milk, margarine, and egg substitute; process until smooth.
  5. Pour the wet mixture into the dry ingredients and stir until moistened, being careful not to overmix.
  6. Prepare a muffin pan with paper liners or greasing.
  7. Fill each cup with about 3/4 full of batter.
  8. Bake in the middle of the oven rack for 20 minutes.
  9. Cool slightly before serving.
