Ingredients
- 1 3/4 cups all-purpose flour ⓘ
- 1/2 pound apples, cored, pared, and finely chopped ⓘ
- 1/2 cup rye flour ⓘ
- 1/4 cup Cheddar cheese, shredded ⓘ
- 1/4 cup sugar ⓘ
- 2 tablespoons dark raisins ⓘ
- 2 tablespoons baking powder ⓘ
- 1/4 teaspoon allspice or cinnamon ⓘ
- 1/2 cup skim milk ⓘ
- 1/3 cup plus 2 teaspoons margarine ⓘ
- 1/4 cup egg substitute ⓘ
Instructions
- Preheat oven to 375°F.
- Combine all-purpose flour, rye flour, shredded Cheddar cheese, sugar, dark raisins, baking powder, and allspice or cinnamon in a medium mixing bowl.
- Stir to combine and set aside.
- In a blender, combine skim milk, margarine, and egg substitute; process until smooth.
- Pour the wet mixture into the dry ingredients and stir until moistened, being careful not to overmix.
- Prepare a muffin pan with paper liners or greasing.
- Fill each cup with about 3/4 full of batter.
- Bake in the middle of the oven rack for 20 minutes.
