Ingredients

  • 4 potatoes, peeled and chopped fine
  • 1 carrot, peeled and chopped fine
  • 1 large onion, chopped fine
  • 2 c. chicken broth
  • 1/4 c. melted margarine
  • 3 Tbsp. flour
  • 2 c. milk
  • salt and pepper to taste
  • 2 c. grated sharp cheese

Instructions

  1. Combine potatoes, carrot, onion, and chicken broth in a large saucepan.
  2. Simmer, loosely covered, for 15 minutes.
  3. Blend margarine and flour in the saucepan.
  4. Whisk in milk gradually until smooth.
  5. Add the grated cheese.
  6. Cook over low heat until the cheese is melted, stirring constantly.
  7. Add salt and pepper to taste.
