A wholesome homemade granola packed with dates, bananas, and coconut, perfect for a nutritious breakfast or snack, appealing to health-conscious and flavor-seeking eaters.

Ingredients

  • 1 cup dates
  • 2 bananas
  • 1 tablespoon vanilla
  • 8 cups oats
  • 1/2 cup cornmeal
  • 1 cup coconut
  • 1/2 cup nuts
  • 1 1/2 teaspoon salt

Instructions

  1. Soften the dates in hot water.
  2. Blend the softened dates with some of the hot water to make a paste.
  3. Add the bananas and vanilla to the date mixture and blend until smooth.
  4. Mix the dry ingredients (oats, cornmeal, coconut, nuts, salt) in a large bowl.
  5. Add the blended date and banana mixture to the dry ingredients and mix thoroughly.
  6. Crumble the mixture onto sprayed cookie sheets.
  7. Bake at 150°F overnight or at 300°F for 90 minutes, stirring every 30 minutes.
  8. Add 1 cup dried fruit prior to serving.
