- Soften the dates in hot water.
- Blend the softened dates with some of the hot water to make a paste.
- Add the bananas and vanilla to the date mixture and blend until smooth.
- Mix the dry ingredients (oats, cornmeal, coconut, nuts, salt) in a large bowl.
- Add the blended date and banana mixture to the dry ingredients and mix thoroughly.
- Crumble the mixture onto sprayed cookie sheets.
- Bake at 150°F overnight or at 300°F for 90 minutes, stirring every 30 minutes.
- Add 1 cup dried fruit prior to serving.
