Ingredients

  • 29 oz. can peach halves, drained
  • 1 Tbsp. lemon juice
  • 2 Tbsp. light brown sugar
  • 14 oz. package Dromedary gingerbread mix
  • 8 oz. package Dromedary corn muffin mix
  • 3 Tbsp. grated orange rind
  • 2 eggs
  • 1/3 cup buttermilk
  • 3 Tbsp. butter
  • 3 Tbsp. orange marmalade
  • light cream

Instructions

  1. Combine peach halves, lemon juice, and brown sugar in a bowl.
  2. Pour the fruit mixture into a greased 1 1/2-quart round cake dish or casserole.
  3. In a separate bowl, blend gingerbread mix, corn muffin mix, and grated orange rind.
  4. Beat in eggs and buttermilk until smooth.
  5. Set aside 2 cups of batter for the muffins.
  6. Spoon the remaining batter over the fruit in the casserole dish.
  7. Mix melted butter and orange marmalade into the reserved batter.
  8. Pour the batter into 12 greased 2 1/2-inch muffin pan cups.
  9. Bake the cobbler on the lower shelf for 30 to 35 minutes and the muffins on the upper shelf for 20 minutes in a preheated oven at 375°F.
  10. Serve the muffins warm and the cobbler warm with light cream and a sprinkle of nutmeg.
