Ingredients

  • 40 soda crackers
  • 1/2 cup butter
  • 4 egg whites
  • 1/2 pint whipping cream
  • 2 teaspoons powdered sugar
  • 1 cup sugar
  • 1/2 teaspoon vanilla
  • pinch of salt
  • 1 can pie filling (cherry, raspberry, blueberry)

Instructions

  1. Combine soda crackers with butter and press into the bottom of a 9 x 13-inch baking pan, reserving 1/4 cup for topping.
  2. Beat egg whites until stiff peaks form, then gradually add sugar, salt, and vanilla.
  3. Spread the egg white mixture over the cracker crumbs in the pan.
  4. Bake in a 325°F oven for 10 to 15 minutes.
  5. Allow to cool.
  6. Spread pie filling over the cooled layer.
  7. Whip the whipping cream until stiff.
  8. Add powdered sugar to the whipped cream and mix well.
  9. Spread the whipped cream over the pie filling.
  10. Refrigerate until ready to serve, then cut into squares.
