Easy Garden Vegetable Pie

Ingredients

  • 2 c. chopped broccoli
  • 1/2 c. chopped onion
  • 1/2 c. chopped green pepper
  • 1 c. shredded Cheddar cheese (4 oz.)
  • 1 1/2 c. milk
  • 3/4 c. Bisquick
  • 3 eggs
  • 1 tsp. salt
  • 1/4 tsp. pepper

Instructions

  1. Heat oven to 350°F.
  2. Lightly grease a pie plate.
  3. Heat salted water and add the chopped broccoli.
  4. Cover and bring to a boil.
  5. Cook until almost tender, about 5 minutes.
  6. Drain the broccoli.
  7. Mix the cooked broccoli, chopped onion, chopped green pepper, and shredded Cheddar cheese in the pie plate.
  8. In a blender or with a hand mixer, beat the remaining ingredients (milk, Bisquick, eggs, salt, pepper) until smooth, about 15 seconds in the blender or 1 minute with a hand mixer.
  9. Pour the mixture into the pie plate over the vegetables and cheese.
  10. Bake until golden brown and a knife inserted in the center comes out clean, about 40 minutes.
  11. Let stand for 5 minutes before cutting and serving.
