Ingredients

  • 1 lb. fresh limas, shelled
  • 1 c. water
  • 1/3 c. chopped celery
  • 1/3 c. commercial Italian salad dressing
  • 2 green onions, chopped
  • 2 Tbsp. chopped green pepper
  • 2 Tbsp. chopped pimiento
  • 1 Tbsp. chopped fresh parsley

Instructions

  1. Combine beans and water in a 1 1/2-quart casserole.
  2. Cover with heavy-duty plastic wrap and microwave at High for 5 minutes.
  3. Reduce heat to Medium-high (70% power); cover and microwave for 25 to 30 minutes or until tender, stirring every 5 minutes.
  4. Let stand, covered, 3 minutes; drain.
  5. Add celery and remaining ingredients to beans.
  6. Microwave, uncovered, at High for 1 minute or until thoroughly heated.
  7. Serve with a slotted spoon.
