Zesty nachos featuring crispy baked tortilla chips topped with spicy tomato sauce, melted mozzarella and Parmesan, jalapenos, and fresh parsley, perfect for sharing at casual gatherings.

Ingredients

  • 16 nachos
  • 4 6-inch corn tortillas
  • 1 1/2 tsp vegetable oil
  • 1/2 cup tomato sauce
  • 2 cloves garlic
  • 1/2 tsp ground cumin
  • 1/2 tsp chili powder
  • Pinch of ground cloves
  • 2 small jalapeno peppers
  • 1/2 cup shredded mozzarella
  • 3 Tbsp grated Parmesan cheese
  • 2 Tbsp minced parsley

Instructions

  1. Preheat oven to 400°F (200°C). Brush both sides of the tortillas with vegetable oil.
  2. Cut each tortilla into quarters and place on an ungreased baking sheet.
  3. Bake uncovered until crisp, about 10 minutes.
  4. In a small saucepan, combine tomato sauce, minced garlic, ground cumin, chili powder, and ground cloves.
  5. Cover and bring to a boil over high heat, about 1 minute.
  6. Reduce heat and simmer uncovered, stirring, until sauce thickens slightly, about 5 minutes.
  7. Top the baked tortillas with the tomato sauce and chopped jalapeno peppers.
  8. Sprinkle shredded mozzarella and grated Parmesan cheese over the toppings.
  9. Bake uncovered until the cheeses have melted, about 3 minutes.
  10. Sprinkle with minced parsley and serve warm.
