Zesty Pineapple Relish

Ingredients

  • 1 c. diced fresh ripe pineapple
  • 1 c. diced peeled seedless cucumber
  • 1/4 c. diced red onion
  • 1 tsp. minced fresh red chili pepper
  • 1/2 tsp. finely minced garlic
  • 1 tsp. grated lime zest
  • 1/4 c. fresh lime juice
  • 1 Tbsp. finely slivered fresh basil
  • 1 Tbsp. coarsely chopped cilantro leaves

Instructions

  1. Remove the seeds and ribs from the red chili pepper (wear rubber gloves to do so) and mince the chili.
  2. Combine diced pineapple, diced cucumber, diced red onion, minced chili, minced garlic, lime zest, lime juice, chopped basil, and cilantro in a bowl.
  3. Mix well and serve immediately or chill for flavors to meld.
