Ingredients

  • 2 1/2 oz. jar mushrooms
  • 1 1/2 cups cauliflower florets
  • 1 cup broccoli florets
  • 2 stalks celery, cut into 2-inch strips
  • 3/4 cup tarragon vinegar
  • 1/3 cup oil
  • 2 tablespoons sugar
  • 1 teaspoon salt
  • dash of pepper

Instructions

  1. Drain the mushrooms and reserve the liquid.
  2. Add enough water to the reserved liquid to make 1 cup.
  3. In a large skillet, combine the mushrooms, cauliflower, broccoli, celery, tarragon vinegar, oil, sugar, salt, and pepper.
  4. Bring to a boil, stirring occasionally.
  5. Simmer for about 5 minutes.
  6. Cool the mixture and refrigerate in a tightly covered bowl for at least 24 hours before serving.
