Ingredients

  • 2 15 oz. cans kidney beans, drained
  • 1 15 oz. can black beans, drained
  • 1 15 oz. can white beans, drained
  • 1 quart fresh or canned chopped tomatoes
  • 1 can chicken broth
  • 1/2 cup chopped onion
  • 1 cup chopped mushrooms
  • 3 or 4 garlic cloves
  • 1/2 to 3/4 pound chopped smoked sausage or beef
  • 1 teaspoon dried basil
  • 1 teaspoon Italian seasoning
  • 1 teaspoon salt
  • 1 teaspoon pepper
  • 1/2 to 3/4 teaspoon crushed red pepper

Instructions

  1. If using fresh tomatoes, cook them with onions, mushrooms, and garlic in a 3-quart saucepan until nearly tender.
  2. Add broth and drained beans along with the chopped smoked sausage or beef.
  3. Add seasonings and bring to a boil. Reduce heat and simmer covered for 45 minutes to 1 hour.
  4. Serve hot, yielding 8 to 10 servings.
