Ingredients

  • 1 Tbsp. olive oil
  • 1 large onion, chopped
  • 3 medium zucchini, 1/4 inch slices
  • 1 large roasted red sweet pepper, cut in thin strips
  • 2 Tbsp. water
  • 1/2 tsp. cumin
  • 1/8 tsp. salt
  • 1/8 tsp. pepper

Instructions

  1. Heat oil in a large skillet over medium-high heat.
  2. Cook onion in hot oil for 5 to 8 minutes or until tender.
  3. Stir in zucchini, roasted pepper, water, and cumin.
  4. Reduce heat; simmer covered for 3 to 5 minutes or until zucchini is crisp-tender.
  5. Add salt and pepper to taste.
  6. Transfer mixture to a serving bowl; top with cheese.
